The quick how-to

1. Cut & dry: Slice cheese into 1–2″ thick blocks. Let it sit uncovered in the fridge 1–2 hours to dry slightly.

2. Make smoke, not heat: Light a smoke tube (or cold smoke attachment). Keep the smoker off or on the lowest possible setting.

3. Smoke time: 1–2 hours, flipping halfway through. Lighter cheeses take smoke fast.

4. Rest for the win: Wrap in parchment, then bag it and let it rest in the fridge for 1–2 weeks. Flavor smooths out and gets amazing.
